Hello! I am using a KA Sourdough Starter that I received in the mail. The recipes I would like to bake are for a starter made with strong flour. Can I begin using strong flour to feed my starter and nudge it toward a higher protein content? Also, the recipes call for 500g of starter. Can I somehow increase the size of my KA starter so I can pull off twice the starter each time I would like to bake?

Thanks for the great blog post and for the help! I love to bake and I’m eager to learn.
