Hi Nikki,

As long as you keep your proportions equal by weight, you can feed your small amount of starter a larger feeding and allow it to ferment before measuring it out to use in your recipes. This allows you to maintain a smaller portion most of the time, and then just increase as needed when you're baking larger batches.
