Hi Cindy, foil might be a bit tricky to work with, but I have used a metal bowl over a sheet tray or on a stone to replicate the effects of a Dutch oven, so that might be a good option. Check out this blog post on how to add steam to your bread baking for a more detailed look at various methods of adding steam. If your oven is running low, you might want to purchase an oven thermometer to help you guage what your real baking temperature is. I once had an oven that was running 50 degrees too hot, but once I figured that out it was easy enough to adjust the setting to get me to the correct baking temperature. Allow the oven to preheat for a full 30 minutes and then check the thermometer reading, and adjust your dial accordingly. Wait until the thermometer is reading the correct temperature before baking.
