I am very energized by reading this blog, just starting to bake bread again.
I don't have a dutch oven, could I put aluminum foil over the pan while baking instead?

Also, I live in an apartment and my oven does not heat up enough in my opinion, which doesn't help. I do prefer to bake my own bread in spite of that. 😊
