Hi Lottie, I'm guessing you're talking about the No Knead Crusty White Bread recipe, which is a rather large recipe. It's easiest and most accurate to pare down a recipe by using a scale and reducing the weight measurements by the same percentage, but if you don't have a scale I would try to make a half recipe, which will result in a loaf that weighs about 1 1/2 lbs after baking. The half recipe would look like this:
3 3/4 cups (450g) King Arthur Unbleached All-Purpose flour
1 1/2 cups (340g) lukewarm water
1 1/2 teaspoons (9g) salt
2 1/4 teaspoons (7g) instant yeast
You could either bake this in a 9" X 5" loaf pan, free form on a baking sheet or stone, or in a Dutch oven. Give our Baker's Hotline a call if you need more help modifying this recipe (855-371-2253). We're here M-F from 9am-9pm EST, and Saturday and Sunday from 9am-5pm EST. We'd be happy to help!
