I made this recipe today. My sourdough starter was pretty active when I put it in the preferment yesterday evening. This morning the preferment was active. I followed the recipe exactly with the other additions, heated the liquids to about 108. the dough was really sticky and shaggy, and remained pretty shaggy through all the folds and coils and never smoothed out. When it was time to form the loaves they we lumpy and I could not manage any tautness at all. I just flopped them into the brotforms. There was some oven spring but not as much as I would have liked. Any suggestions on what went wrong?
