I made two large loaves today. The first I used a convection oven. The loaf came out very dark and hard as a brick.(The inside was delicious, never the less!) I decided to bake the second loaf in a regular oven. It came out even darker and harder. I think next time I will lower the temp by 25 degrees and less time.
