Hi Andrea, I think this recipe would work great in a Dutch oven, but because it's such a big loaf (1400g/ or approximately 3lbs), you will likely need a large Dutch oven in you want to make a single boule. I would think a 5-6 quart Dutch oven (or even a little larger) would be best. When making two medium loaves, a more traditional sized Dutch oven (3-4 quarts) would likely work fine. If you're preheating the Dutch oven empty I would recommend reducing the preheat/baking temperature to 450F throughout, and remove the lid after 20 minutes. Baking time will likely be a bit different, especially with the smaller loaves, so keep an eye on the bread after you remove the lid.
