I'm looking forward to making this bread, but I am curious that the recipe does not seem to include any actual kneading of the dough. Step 5 of the instructions says to mix the ingredients together until they are thoroughly combined and homogeneous, and subsequent steps include letting the dough rest and then folding it periodically. Am I missing something?
