Rudy February 14, 2024 at 2:33am How was the 25 folds calculated? I'm a pastry noob but at initial butter lock in you have 1 layer of dough-butter-dough, after the letter fold you have 3, and then after the book fold you get x4 so now you have 12. Am I missing a step? Reply
