@Barb and @Linda- thanks so much for taking the time to respond to my inquiry!!! I love math and baking, but am not spatial enough to save my life to be able to visualize the layers. The way you explained it was so easy to understand-- thanks! Also, i am so glad for Philip's experiment, because I love croissants with an open crumb, so I will definitely be giving this technique a try!
