I was just about spend a fair chunk on buying a planetary mixer for my new restaurant. We only make three breads, pizza (thin crust), pita bread and naan bread, to me the method looks like it'll work well. Kneading is rather painful especially large(ish) quantities, would this method be suitable for me? Secondly as I'm in the coastal tropics would the waiting time between folding be reduced?
