Matt, you are so very correct! I have a stone and steel still in their wrappers for years (gifts from the kids now grown), since I do exactly what you do in any oven, either electric or gas and get the same results. Such a waste of energy heating a steel for an hour. Key is the 180 degree rotation at 5-6 minutes and check it as needed. I build it in a thick steel cookie sheet, and let it set 5-10 minutes to get it rising again before popping in the oven. I keep the convection function off.
