In a cob oven, you have the opportunity to get to higher levels of heat than a home oven (750 degrees+) which will allow pizzas to cook quite quickly and produce an even higher rise once loaded. It can be helpful to get a IR thermometer to know when your oven's bricks have reached these temperatures so that you can get the most out of each bake.
