Hi Paula! In a cob oven, you have the opportunity to get to higher levels of heat than a home oven (750 degrees+) which will allow pizzas to cook quite quickly and produce an even higher rise once loaded. It can be helpful to get a IR thermometer to know when your oven's bricks have reached these temperatures so that you can get the most out of each bake. As always, feel free to call our free Baker's Hotline at 855-371-2253 for further assistance. Happy Baking!
