Hi Anne, you can easily reduce this recipe by 1/3 by multiplying the weight of each of the ingredients by .66. Baking time is likely to be a bit less, but not significantly so. Once you remove the lid from the Dutch oven, keep an eye on your bread and look for the normal signs that your bread is done baking (rich brown color, firm crust, sounds hollow when you tap the bottom of the loaf).
