I love that you share about using unfed starter. When I made that change I found I could fit sourdough into my schedule.

The other step I skip is preheating at all. I put cold dough into a cold Dutch Oven into a cold oven, and then turn the oven on. It is so nice to not have to handle a searing cast iron pot.
