Apparently, I started doing the PJ method quite awhile ago…started on my sourdough journey 3 years ago…my starter, fed when I remember or when I want to bake…has traveled from Northern California to Southern Georgia…and now lives on the counter in the winter and fridge at the height of heat season. In my first year, I started the no knead bread as really? I am lazy… That being said, in my 3 years, things get streamlined…have put too much dough in the dough bucket and had it explode in the fridge…have done everything to the mixer and forgot the starter…but ultimately I now just grab a scoop of starter, whip it in my mixer or now, as I am in an RV for life I whip it up by hand…I basically just go…it’s ingrained in my mind…and came to the same conclusions as PJ…who knew I was trending before I even knew it was trendy! I love love love PJ’s blogs…I learn new things every time I bake!
