You'll want to have a inferred thermometer handy if you try this Jd. I'm not sure about other brands but USA pans suggest not exceeding 450 degrees (while the Ooni can easily reach twice that). You could try to push the max temperature a bit but you'd run the risk of the pan warping as you mentioned. Cast iron or carbon steal can be a better option for high heat situations like this.
