Hi Rob, you'll probably have to experiment a bit, but typically when you refrigerate the dough balls as you describe they stretch very easily and can be quite thin, I would expect they'll bake very fast in your Ooni (maybe only a few minutes). Not a type of pizza that is going to bake well with a lot of toppings on it, so go light.
