Hi Nancy! There are quite a few variables here that could come into play. Generally speaking, letting unbaked loaves rest in the fridge overnight is just fine (anywhere from 8-12 hours). If your starter is very vigorous or the temperature of your fridge is a bit warmer, that dough may continue to ferment a bit quicker and you run the risk of over proofing. If possible, it would be best to check those loaves a bit earlier in the morning...if they still need a bit more time you can allow them to finish rising. If they look fully risen though, you'll want to get them into the oven as soon as possible.
