When I make bagels, I only let them rise in the fridge overnight 10-14 hours. After making the dough I let it rest for 20 min, then shape them, place on a half sheet pan (lined with cornmeal and parchment paper) and they go directly in fridge. It’s easy to pull them out in the morning and let them come to room temp while you prepare the boiling water and toppings and coffee…let the dogs out…dry the laundry…I start them after dinner and in the morning it’s so easy and quick.
