First of all, I love your products, recipes and helpful comments! I am making a Dutch oven, no knead, rustic loaf. I do a warm first rise until at least double in size, punch down, reshape and second rise in fridge overnight. Usually 10 hours or so. I bring out of fridge, turn onto floured parchment and reshape. The dough shrinks in size a bit. At this point I’m preheating my oven with Dutch oven and letting dough rest on counter. Should I punch my dough down again or just shape and bake when the oven and pan are hot. The bread does not seem to rise very much nor is it very soft inside. I do slit with lame when resting covered on counter. Not sure if I’m expecting a larger, softer loaf?
