Hi so i started my recipe yesterday around 1pm. I let rest for one hour on the counter before I was going to start my strech/folds and then unfortunately had to run our for an emergency. I threw it in the fridge and let it sit all night. I pulled it out this morning & plan to let it get to room temperature before starting my stretch and folds. After I start that. How long does it have to sit on the counter proofing before baking?!
If I am totally wrong please correct me, I need help! I don't know if I'm over thinking or just botching this all together.
