Hi Lionel, how are you measuring your flour? If you are using measuring cups to scoop the flour, you may be getting too much flour in your recipe causing a dense bread. When flour is scooped it gets compacted down. We recommend gently spooning the flour into your measuring cup and leveling off the top.
