Hi Traci, although the No-Knead Crusty White Bread recipe does allow for up to 7 days in the fridge, this isn't something we would recommend for most bread doughs, especially ones that contain whole grain flours in them. Keep in mind that the dough will continue to slowly ferment in the refrigerator, and both the rising power of the yeast and the structure of the dough can deteriorate if allowed to over-ferment.
