I suspect your dough recovered just fine and it was probably the cool temperature of the dough that was slowing it down, although a very stiff dough can also have a more difficult time rising. For yeast breads, the fact the dough fell in the fridge, while not ideal, won't necessarily prevent the dough from rising again.
