This is so helpful! I wonder what the minimum time to refrigerate a first or second rise would be. I just found out I need to leave the house for three hours and I’m baking a bread that requires two 90 minute rises, and then a third one hour rise. I plan to do the second rise in the fridge, but I’m not sure how long to leave it. I get the maximum is 48 hours but what’s the minimum?
