It sounds like your rolls are over-proofing before you have a chance to bake them, Jennifer. In the future you could reduce the amount of yeast you use, or shorten the amount of time they sit in the fridge before baking. When they deflate you can try to reshape them and let them rise a third time on your counter before baking. But this third added rise will be pretty slow and might not be quite a full as the first two.
