It sounds like a simple preferment might be the way to go for your baking M.Kabbani. We have a great blog exploring all the ins and outs of preferments with our very talented baker Martin here on our website. While the timeline you mapped out seems a bit long and might not produce a well risen bread, there are lots of ways of get great flavor and texture without keeping a sourdough starter on hand!
