Good morning. I'm in the middle of doing 8 loaves of sourdough bread. 4 of one recipe and 2 another. The recipes are from "Bread for Dummies". Each are in their own bowl. They both call for stretch/fold/x4/rest for 30 several times then several hours of rise then shape. I planned poorly and realized I would be up all night and popped them all in the frig over night after the last stretch/fold. I read all your info on frig rises. But now it's morning and I've removed them from frig. and they are warming to room temp. At this point the recipes call for shape/bake. But I'm lost trying to compare your 1st/2nd rise with what I'm doing. Can you help?
