How would this work with challah? Should I braid and then put it in the refrigerator after it rises for an hour on the counter? Or, would it be better to braid, refrigerate, and then let it rest for an hour before baking? I use a family recipe that calls for a 2-hour first rise, punch down for a second, braid and then another hour rise. Thoughts? Thanks so much and I LOVE your flours and Harvest Bread recipe. Best EVER!
