Hi Rudy, we find freezing dough after the first rise isn't the best method. Freezing always damages some of the yeast cells, but freezing right after the dough has been mixed and kneaded seems to cause the least amount of damage. Check out this blog post on freezing roll dough, and consider freezing your extra dough right after you're done kneading.
