Hi Christine, this will depend a little on if you're making a yeast-raised bread or an entirely naturally leavened sourdough bread. Most sourdough bread recipes that don't contain added yeast can last in the refrigerator for up to 24 hours and still rise very well in the oven, but a recipe with yeast in it may be more likely to overproof and fall if left too long in the refrigerator.
