Hi Paula! I would take it out of the refrigerator no more than 12-14 hours later than when you placed it in there. You will want to get the initial chill off the dough for about 10-15 minutes before shaping, no need to use the proof setting on your oven as once it is shaped, its thinness will cause it warm up quite quickly.
