Hi Mike, unfortunately other baked goods like cakes and muffins don't portion out quite so easily and are usually best baked within a certain window of time. If your cake or other baked good is for a special occasion, we always recommend making the recipe ahead of time at least once so that you can work out how everything plays out in your own oven. An oven thermometer is often recommended as well, since home ovens are often off by several degrees, and double-checking with a thermometer can allow you to correct for this. We also recommend preheating for a full 30 minutes before baking because it generally takes much longer for an oven to heat up and reach a stable temperature than your oven might indicate.
