Hi Amy, while it might be possible to substitute sourdough starter for the yeast in this recipe, it would end up being a totally different recipe; requiring a different timeline, and also yielding different results. Since this recipe is already a bit tricky because of the very high hydration (100%), we would encourage you to make it exactly as written.
