I have a regularly fed KAF starter that I’ve kept going for almost a year. Yesterday I got distracted on my measurements and screwed up the number of grams of flour and water. I think I added about a third to a half more flour and water than starter. So I have ended up with an enormous amount of starter that has only risen 50% in 24 hours. After reading as much as I can find, I think I’m going to go through the 113 g of each ingredient routine, and see if I can get it back to normal. Do you think the discard is usable? Any other suggestions?
