Hi Fran, it can take up to 10 days of twice a day feedings at room temperature to fully convert a starter from AP flour to whole wheat flour, but that doesn't mean you can't use it in the interim! Just don't expect your new whole wheat starter to perform like your old one did until it has had time to adjust to its new feeding routine. Also, usually the aroma of a neglected starter will improve considerably after a few days of twice a day feedings at room temperature, so either way some room temperature feeding time should get you back in business!
