Love the site and content King Arthur is producing, been enjoying getting into baking. Seem to be having some issues with what feels like a lazy or problematic starter.
I followed the 1:1:1 program you have on the site, days 1,2 were "normal". On day #3 when starting the 12 hr feed cycles I got 2x growth after the first 12 hr feed, then about 3x growth after the next 12 hr feed.
Since that second 12 hr feed, its been 5 more days of 12 hr feeding cycles. There has been no growth with any of the feeds since day 3, and limited to no bubbles. I continue to follow the 12 hr cycle, typically the starter is on the stiff side after feed/mix time, becomes pretty runny by next 12 hr feed.
Questions are is should I continue on with the 12 hr cycles? Is it normal for that early 2x-3x growth with feeds then nothing for 5 days? Should I toss it and start from scratch, and if so what lesson can I learn after the first two 12 hr feedings seemed to go fine then nada.
