Somehow PJ Hamel always writes the post I need right before I come looking!

I have a feeding question:
Should the ratio of starter/flour/water be 1:1:1 (56g, 56g, and 56g) or 2:1:1 (113g, 56g, 56g)?

And a hooch question:
If I pour off the hooch, do I need to replace it with the same amount of water to keep the solid/liquid ratio the same?
