I can attest that sourdough starter is most forgiving. I've had mine for about 21 years. I routinely go months between feedings. But then the urge strikes me and I take it out of the fridge. Stir it, feed it, cover it loosely with a dish towel and set it on the counter overnight. The next morning it's alive and well.
