Living in a much too cold climate to grow pandan, I decided to stretch precious resource of fresh pandan leaves purchased online & make my own pandan extract using method similar to DIY vanilla extract. Cleaned the leaves well, cut them to length that would fit 4oz glass extract bottle. Gave the leaves a good rub to help release the flavor & color, then popped them in the bottle filled with vodka. Leave a dark place to infuse for 3months+ ( although it only took a few days for flavor to develop, takes longer to get strong green color). Works great & keeps well in pantry.
