Totally agree with Mark M. that this is an amazing article and a great resource which I'll bookmark for future use. I've been baking with sourdough for years and feel like your articles just give the opportunity to better understand the chemistry of sourdough and to up my bread. Thanks. This is why I love King Arthur so much.
