Barb - all that I can say is WOW! I just read the three articles and was amazed by all of the relevant information that was organized and presented so concisely. Honestly, I'm not sure that I can wrap my head around all of the information in one sitting. I will read these articles several more times to better grasp all of the information. You have written several interesting blog articles in the past (e.g. desired dough temperature), but you hit it out of the park with these blog articles about sourdough bread!!
