Hi Donna, adding a little sour salt or white vinegar can work to increase the tang in your bread, but you have to be careful not to use too much, as sour salt (citric acid) can adversely affect the structure of your bread when used too generously. For our Extra Tangy Sourdough Bread recipe we recommend adding only 1/2 to 5/8 teaspoon of sour salt to enhance the flavor. The acidity of vinegar can have similar effects, but isn't quite as potent. I would try adding only a tablespoon or two of this ingredient and see how you like the results.
