My last crumb was light, fluffy and sweeter than usual. Almost like sandwich bread. I did a few things different than usual : I let the loaves sit on the counter for a few hours after proofing in the refrigerator over night and the bulk starter fell a bit but I still used it. Or could it be something else like the yeast/bacterial ratio ??๐
