Sorry I wasn't able to be quite so timely with my reply this time, Karen! Because of your warmer temperatures you might want to consider adjusting your feeding routine a bit. You might find that feeding with a 1:5:5 ratio (starter:water:flour, by weight) slows down the ripening process a bit and allows you to line up your feedings closer to the peak when you're maintaining your starter at room temperature. For our starter routine this type of a feeding would look like this: 23g starter + 113g water + 113g flour. This should help eliminate the hooch from developing between feedings, and also improve the activity level of your starter.
