I'm trying to create a starter and followed the 1-1-1 recipe your article pointed to. It's been 2 weeks and I'm getting some bubbles but very little rise. I live in the mountains and isn't warm here now. It's also a very dry climate. I've been trying to keep it in the oven with the light on and a pan of water. I'm worried it gets too warm as it's around 85 degrees F. The pan of water results in about 50-70% humidity. Out of the oven the humidity is single digits. Any suggestions?
