I generally refrigerate mine for up to 2-3 months between uses (there is only one of me, nowadays!). I just plan on about 3 days of regular feeding to make it happy and active again, then bake several loaves (one for now, 2 for the freezer!), feed it again and back to the fridge to sleep until next time. My current starter I got from you about 20 years ago and it has survived interstate moves three times! Prior to that (for about 10 years) I had a starter I had made in Iowa with wild yeasts I had trapped on our back porch (took 3 tries to get a good one). It was lovely, until one day when it was pink, and didn't smell very good.
