Hi Barb, if your feeding when your starter has reached its peak, or is just beginning to fall, it sounds like once a day is enough in your cool house during the winter. If your starter seems very sluggish and isn't giving you the rise you want in your baking, you may find a day or two of twice a day feedings in a warmer environment will help restore your starter's normal rising behavior. Aim for a temperature in the 70-80F range during this period.
